Keto Focaccia Bread Recipe

Well, if you're starting a low carb or keto diet, try this flat bread recipe out! Great to make sandwiches or just eat as is! Full of flavor! Flavors like fresh garlic, crushed peppercorn, and black kalamata olives! Only about 5 grams net carbs per serving!
Keto Focaccia Bread
Yields: 1 - 9" x 13" sheet pan
Makes about 4- 6 sandwiches (depends on size)
Ingredients
1 1/2 cups warm water
2 tsp dry active yeast
2 tsp monkfruit sugar
1/4 cup olive oil
2 minced garlic cloves
4 eggs
1 cup vital wheat gluten flour
2 cups almond flour
1 tsp sea salt
1 tsp baking soda
Black kalamta olives
crushed peppercorn
Sea salt coarse
Directions:
Preheat oven 375F
Olive oil a 9" x 13" baking sheet pan
1. In a mixing bowl, combine the warm water with the yeast until dissolve. Add the monkfruit, olive oil, minced garlic, and 2 eggs. Whisk together until combined.
2. Stir in the vital gluten flour, almond flour, sea salt, and the baking soda. Mix until it's just combined. Set aside.

3. In a mixing bowl, with your mixer machine or hand mixer whisk the last 2 eggs on high speed until the eggs are thick and fluffy. This will take about 2-5 minutes.

4. Fold the eggs in to the dough until just combined. Pour in to your greased baking sheet pan. With your spatula, gently spread the batter evenly out. Top with kalamata olives, crushed peppercorn, and sea salt.

5. Bake for 20- 25 minutes or until lightly brown. Let the bread cool completely before cutting. This will let the structure of the bread set up.


Use this bread making sandwiches, hot or cold. Or use it for dipping in sauces! Enjoy as is!
