Keto | Gluten free Pad Thai



Here's a yummy Pad Thai recipe that has a lot of flavor but low in carbs! It's simple and it doesn't take very long to make. I make it with these healthy noodles, that I have found at Costco. One package is only 2 net carbs! Which is crazy to have rice like noodles again with your favorite Asian dishes! The whole recipe is only about 10.9 grams net carb!





Keto | Gluten Free Pad Thai

Yields: 1-2 serving

Ingredients


1 package 8 oz Healthy Noodles or your favorite keto noodles




2 boneless chicken thighs, sliced

2 tbsp avocado oil

2 minced garlic cloves

1-2 tsp chili garlic paste or sriracha sauce

2 - 3 tbsp low sodium & gluten free soy sauce

1/2 medium white onion, diced

1/2 green bell pepper, sliced

2 tsp monkfruit sugar

1-2 tbsp peanut butter powder, optional

1-2 limes, squeeze just the juice

2 tbsp cilantro, finely chopped

2 sprigs of green onions, sliced


1/4 cup crushed peanuts


Directions:


1. In a medium skillet on medium heat, cook together the sliced chicken and the avocado oil. Cook until its fully cooked through and lightly browning the edges.


2. Add the minced garlic, chili paste or sauce, 1 tbsp soy sauce, 1 lime juice, diced onions, 1 tsp monkfruit sugar, 1-2 tbsp peanut butter powder (optional) and the bell pepper. Continue to cook until the veggies start to soften. Then turn down your heat on low.



3. In the meanwhile, drain your healthy noodles from the package and rinse them off and drain. Add the noodles to the skillet. Mix until the noodles are coated.


4. Then add the remaining 2 tbsp soy sauce, 1 tsp monkfruit sugar, cilantro and 1 more juice from a lime. Top it with the 1/4 cup peanuts and the chopped green onions. Serve hot! Enjoy!
