Looking for a no carb flatbread and made with no flour? This might be the one for you! This may sound strange or weird. But the main ingredient in this flatbread is oven baked pork rinds. But if you're on a Keto or low carb diet, this is prefect for panini's or sandwiches!
I like to use oven baked pork rinds because I don't like the fried rinds due to the horrible vegetable oil that they use. Pork skin actually has some benefits to your health for example, one serving of pork rinds has approximately 8 grams of collagen protein which is great for your hair, nails, and skin.
This recipe has no carbs or sugar in it! It's flour less, which means no gluten! Plus, no dairy, no grains, and no nuts! Great for people that have food allergies or just want a low carb meal!

Keto & Paleo Flourless Flatbread

Ready in 30 minutes
Serves 1 large flatbread round 12"
No carbs!
Ingredients
1 - 4 oz bag oven baked pork rinds
1/2 tsp sea salt
1 tsp dried granulated onion
4 eggs
1 tsp baking powder
2 tsp xanthan gum
Preparation:
Preheat oven at 375F | 1 parchment lined baking sheet pan or 12" pizza pan
In a food processor, place the pork rinds, sea salt, granulated onion, eggs, baking powder, and xanthan gum.
Blend until its combined and forms a soft dough.
Place the dough on to your parchment lined baking pan and use a offset spatula or a rubber spatula. Evenly spread the dough into a rectangle or circular shape. Spread it to about 1/4" to 1/2" thick.
Bake it for 10-15 minutes or until the dough springs back gently after you touch it. Let it cool and cut into desired sandwich pieces and enjoy making hot or cold sandwiches.

Storage:
You can store these flat breads in the fridge in a food safe container or plastic zip-lock bags. They freeze up to 2 months!
