Keto Spinach Twist Bread Sticks

Are you looking for a Keto friendly bread stick that has a bread like texture? Well, I think I finally got it right! This is full of flavor like garlic, spinach, olive oil, and mozzarella cheese. With a fluffy bread like texture! I'm really excited about this one. I could eat the whole sheet pan of them. I ate 2 of them with my Tuscany soup. It was heavenly! You got to try this recipe out! It only has 6 grams NET carb! That's all!
Keto Spinach Twist Bread Sticks
Yields: 9 Twists
6 grams NET carb
Ingredients
Dough:
3 cups water
1 egg
1 cup Vital wheat gluten
1 cup coconut flour
1 cup Almond flour
1 tbsp psylluim husk
1 tsp baking powder
1/2 tsp sea salt
Spinach Filling:
2 cups baby leaf spinach
2 tbsp Olive oil
2 minced garlic cloves
1/2 cup crumbled feta cheese
1/2 cup shredded mozzarella cheese
1/2 tsp sea salt
peppercorn to taste
Directions:
Preheat oven to 375F
Dough:
1. In a mixing bowl, place all the dry ingredients and whisk them together until combined.
(vital gluten, coconut flour, almond flour, baking powder, salt, and psyllium husk)
2. With a spatula, stir in the egg and the 3 cups of water. Stir until it forms a dough.
3. Take the dough on to your counter or table and kneed the dough a couple times. Fold the dough over at least 8 or 10 times. You are forming the gluten strands in the dough.
4. Form the dough in to a ball and place it on a piece of parchment paper and with a rolling pin, roll out the dough in to a rectangle, about 1/2" thick.

If you find the dough is sticky just lay a piece of parchment paper on top of the dough and roll it out with your rolling pin.
5. Trim the dough edges so the lines are more clean and rectangle.

6. Using a knife or pastry cutter, cut the dough in half. Then you want to cut the dough in about 1" strips. Like the photo below.
Spinach Filling:
7. In another bowl, toss all the spinach filling ingredients together until coated with olive oil and cheese.
8. Now take one of the strips of dough and add a small amount of spinach filling on top of the strip.

Take another strip of dough and place it on top the spinach filling.

Pinch the dough ends so they stick together. Gently twists the dough, like the photo below.

9. Line a baking sheet with parchment paper. You should place and make about 9 twists. You can sprinkle some more feta on top of the bread sticks. Bake them in the preheat oven of 375F for 35 to 40 minutes.

Enjoy them with a dipping sauce or with soup. Or just enjoy them by themselves! They have a great bread like texture!
You can probably freeze and reheat in the oven if you want to have some on hand.
