1 cup water
8 oz unsalted butter
1/2 cup monkfruit sugar
1/4 tsp sea salt
1 cup vital wheat gluten flour
2 cups almond flour
2 tbsp psyllium husk powder
6 eggs
2 tsp baking soda
1 tsp apple cider vinegar
Directions:
Preheat oven to 375F
Parchment line a baking sheet pan or for rolls use a cupcake pan and line them with cupcake paper liners.
1. In a large pot, boil the cream, water, butter, monkfruit, and salt on medium to high heat.

2. Once you bring the water to a boil, turn down the heat and add the vital wheat gluten flour, almond flour, and the psyllium husk. Stir until it forms a dough.

3. Pour the dough in to a mixing bowl and using a whisk attachment, mix the dough until the steam is gone. Slowly add the eggs to the dough. Continue to whisk the dough on medium to high speed for about 1 minute.

4. Then add the apple cider vinegar and mix again until combined. Finally, add the baking soda last. Mix on medium speed for another minute.

5. If you're making the hamburger buns, on your prepared baking sheet, with a cookie scoop go ahead and scoop out the dough on your sheet. Space them about 2" apart because they will spread some. Bake for 20 minutes until golden brown.

If you're making the rolls, with your cookie scoop, scoop out the dough and place 1 scoop for every cupcake. Bake in the oven for 20-25 minutes or until golden brown.

Let them cool completely until you serve them. This helps the rolls set up the cell structure of the rolls. Slather them with more butter and enjoy your low carb rolls!!

This is a nice bread recipe with a nice buttery flavor and a little bit of sweetness. It's soft and has a nice crust! Enjoy!
