Keto & Sugar Free EggNog



It's starting to look a lot like Christmas in some areas. But you can have your favorite holiday drink now, EggNog! It's sugar free and Keto friendly! It has all your Christmas flavors that you love! Just enough cinnamon and nutmeg to make this your family's favorite!

Plus, you wouldn't know the difference between the real one! There's NO Net Carbs in the whole recipe! ZERO!





Keto & Sugar Free EggNog

Serves about 4

O Net carbs


Ingredients


3 cups heavy whipping cream

2 cups water


6 yolks

3/4 cup monkfruit sugar

1 tsp vanilla extract

1/4 tsp nutmeg

1/2 tsp cinnamon

2 pinches sea salt


Directions:


1. In a medium size pot, scald your cream and water together.


2. In the meanwhile, in a mixing bowl, place the rest of your ingredients and whisk all together until smooth.


3. When your cream and water is hot enough, slowly whisk it in with your yolk/sugar mixture until completely tempered or combined. **It's important to whisk as you pour the hot cream in with your yolks because you don't want them to curdle on you.


4. Pour the whole mixture back in your pot. Cook the eggnog on medium to low heat, slowly stirring with a spatula. You don't want to stop stirring; otherwise, you could curdle your yolks. Keep cooking until it slightly thickens and lightly coats the back of your spatula (nappe = in french)




5. Then once that is done cooking, pour in to a high heat resistant glass jar or pitcher and cool in the fridge. Enjoy!
