Keto | Sugar Free | Gluten free Chocolate Chunk Cookies



Ok, I got it! I've tried many types of Keto or low carb chocolate chip cookie recipes, but it wasn't quite right. I love chocolate chip cookies! I don't know anyone who doesn't. But you got to try these cookies out on your family or just eat the whole darn thing by yourself. It's fine...no judgement, here....


Anyways, this recipe is awesome considering its sugar free and gluten free! With only 3.6 grams Net carbs per cookie! NO really, its an awesome cookie! Secret is don't over bake the cookie or if you want a crispy cookie then go ahead. But if you want a soft texture in the middle you have to bake it at the right amount time of just 10 to 12 minutes and no more! Try this cookie out, please try them out! You will thank me! And your welcome!! :)





Keto | Sugar Free | Gluten Free Chocolate Chunk Cookies

Yields: 20 cookies

3.6 grams Net carb



Ingredients


8 oz unsalted butter, melted

1 cup golden monkfruit sugar

2 tbsp yacon syrup

2 cups almond flour

1 cup coconut flour

1 tsp baking soda

1/2 tsp baking powder

1 tsp sea salt

1 tbsp + 1 tsp vanilla extract

1 cup coarsely chopped (ChocZero) dark 70% chocolates

or your favorite sugar free chocolate chips



Directions:


Preheat oven to 350F

Parchment lined baking sheet pan


1. In in a medium size mixing bowl, with a spatula mix together the monkfruit, syrup, and melted butter together until combined.



2. Add the eggs and vanilla extract to the batter. Mix until thoroughly combined.




3. Stir in all the dry ingredients, except the chocolate pieces. Stir until it forms a dough.

Then stir in the chocolate chunks or chips in the dough until its combined.




4. With a cookie scoop, scoop out 6 cookies on your baking sheet pan. Space them about 2"-3"or so apart. Generously, press the cookies down.



5. Bake them in the oven for 10-12 minutes. If you want them crispier, bake them till 15 minutes. Enjoy with your Keto coffee!



Oh! Even eat them with a Keto hot cocoa or Keto ice cream! Enjoy these guys!



They freeze well up to 2 months in the freezer in a freezer bag or plastic container.
