Being on a low carb diet has improved my health significantly. However, I still like the idea of making low carb breads and eating them with cheeses or meats. Don't you think so, too? I created this bread to resemble the classic baguette loafs. You can toast the slices and use them to make appetizers or great for dipping. It makes 4 baguette loafs and 1-1.5 grams Net carb per slice! (plus, it depends on the size of the slice)
Low Carb | Keto French Baquettes
Yeilds: 4 baguettes
1-1.5 grams Net Carbs
Ingredients
3 1/2 cup water
4 eggs, separated
1 cup vital wheat gluten flour
1 cup coconut flour
1 cup almond flour
2 tbsp psylluim husk
2 tsp baking powder
1 tsp sea salt
Directions:
Preheat oven 400F
Grease baking pan or line with parchment paper
1. In a mixing bowl, combine the water and whisk the egg yolks in. Set the egg whites in another mixing bowl. Set aside.

2. In the water/yolk mixture, stir in all the dry ingredients (vital wheat gluten, coconut flour, almond flour, psylluim husk, baking powder, and sea salt).
3. In the mixing bowl with the egg whites, using your mixing machine or hand mixer, whip the egg whites until soft peaks form.

4. Fold them in to the dough batter until just combined.

5. Place the dough on to a clean work surface and divide the dough in to quarters.

6. Roll each quarter in to a long log shaped loaf. Place on to a baking pan. Score the tops with a knife. (optional)

7. Bake at 400F, for 45-50 minutes or until golden brown. Let it cool completely before you cut in to it.

You can slice these baguettes up and make appetizers out of them. I will show you how to
make crostini's.
