Low Carb & Paleo Hamburger Buns or Sandwich Bread

I love hamburgers of any kind! Vegetarian, vegan, keto, paleo, its all good! But, I wanted a healthier alternative bread with healthier ingredients and less carbs. I don't know about you, but due to the holidays, I need a break from carbs!


I made 2 versions of this bread. And they both came out wonderful. It just comes down to looks and a slight difference in texture. But I enjoyed them both. However, this recipe is paleo friendly and the other one is not by 1 ingredient (xanthan gum). If xanthan gum doesn't bother you than you would love that version as well! I will be posting that one shortly!


I love how this bread is full of nutrients like potassium, fiber, antioxidants, omega 3, iron, and much more! This recipe only has 6.55g Net Carb per bun. Plus, this recipe is dairy free, nut free, gluten free, grain free, and low in carbs/sugars! It's great for loosing weight and even if you have allergies to certain foods.




Low Carb & Paleo Hamburger Buns or Sandwich Bread

Dairy Free | Gluten Free | Grain Free | Nut Free


Ready in 35 minutes

Serves 4 buns or **Double recipe for a full loaf

6.55 grams Net Carbs per bun



Ingredients

1 cup coconut flour

1/4 cup ground flax seed (flax-meal)

1/2 cup hot water

6 eggs

1/2 tsp sea salt

1/2 tsp onion powder

1/2 tsp baking soda

1 tsp baking powder

1 tsp apple cider vinegar

1/4 cup avocado oil


1 tsp xanthan gum (optional) (this will give the bread more texture)


Preparations:

Preheat oven at 375F | Grease a hamburger bun pan or regular parchment lined sheet pan

  1. In a food processor or blender, add the coconut flour, sea salt, onion powder, baking soda, and baking powder. (Plus, add the xanthan gum, if you are using) Pulse that until its completely combined.

  2. In a small bowl, whisk together the flax-meal and the hot water. Let it sit for a minute.

  3. Add in the flax-seed mix, eggs, avocado oil, and vinegar to the food processor with the flour mix. Mix all the ingredients together until its completely smooth and blended.

  4. With a large cookie scoop, divide the dough in to 4 soft balls or soft mounds. Grease your fingers with some baking oil and gently press them to fill the size of the hamburger bun pan or if you're using a sheet pan, scoop them and shape them in round 1"-2" thick mounding disk. Sprinkle some sesame seeds on top, if you wish.

  5. Bake them for 15-20 minutes or until lightly golden on top. Let them cool down and cut them half. They are ready for your next burger!


** If you want to make a full loaf for sandwiches, you will have to double the recipe and line your loaf pan with parchment paper. Bake for 40-45 minutes or until golden brown on top.





Tip for Storage:


It will last about 3 days wrapped on the shelf. Or freeze for a month. Make sure you plastic wrap it or use a food container.
