Low Carbs | Gluten Free | Tuscany Soup



The colder temperatures have inspire me to make a nice hearty soup. I love flavors and spice. This soup will give you just that. A spicy Italian pork sausage soup with the flavors of Italy all in one bowl! If you're looking for a good soup with a kick, try this one out! It's gluten free, sugar free, and Keto friendly. Just sprinkle some mozzarella cheese and a dollop of sour cream and you'll fall in love with this soup.





Tuscany Soup

Yields: 4 servings


Ingredients


3 large spicy Italian pork sausages, sliced

2 tbsp ghee or butter

1/2 medium size white onion, diced

1/2 large green bell pepper, diced

1 medium size zucchini, sliced

1 medium tomato, diced

3 garlic cloves, minced

3 sprigs fresh thyme, finely chopped

1/2 tsp granulated onion powder

1/2 tsp sea salt

fresh crushed peppercorn to taste

1 tbsp chicken base

4 cups water


Directions:


1. In a large pot, on medium to high heat. Saute (cook) your sliced sausage with butter until it's cooked through. **Tip: while that is cooking, go ahead start chopping and dicing all your veggies and throw them in a bowl.

2. Once your meat is cooked through, add all the fresh veggies (except the tomatoes) in to the pot with the minced garlic. Continue to cook the veggies until they start to become tender.

3. Then add your chicken base, spices/herbs, and the water. Stir until its mixed together. Continue to cook until the water starts to boil and then add you tomatoes. Turn down the heat to medium to low and let the soup simmer for about 5 to 10 minutes and then you're done!



Scoop some up in to a soup bowl and top it with mozzarella and sour cream and you're in Italy. (well, not really, but you know) Enjoy!
