Looking for a flavorful low carb pasta with a kick? Check this recipe out!
You can use spicy turkey, chicken, or pork Italian sausage. Or you can use plant base spicy veggie ground meat instead. I found these super low carb pasta noodles from Costco. If you ever go there you should try to find these noodles. They are called Healthy Noodles, with only 2 grams NET carbs in the whole package. They are really good for pasta dishes or pad Thai. They remind me of rice noodles. They are pretty good considering what they are.
Low Carb Spicy Italian Sausage Pasta
Yields: 2-3 servings
2 grams NET Carbs
Ingredients
2 large spicy Italian pork sausage, sliced
2 tbsp Olive oil
1/2 medium white onion, diced
1/2 large green bell pepper, diced
2 cloves of minced garlic
1 cup chopped mushrooms
1 medium zucchini, sliced
1 tsp chili flakes
1/2 tsp onion powder
1/2 tsp thyme
1/2 tsp basil
1/2 tsp Oregano
Salt and pepper to taste
1/4 cup red wine
2 cups marinara sauce
1 package favorite pasta noodles or the Healthy Noodles
Directions:
1. In a large skillet, on medium heat add the 2 tbsp olive oil. Add the sausage and cook until it's lightly browned.

2. Add the all the veggies and garlic. Cook until the veggies start to get tender.

3. Then add all your herbs, marinara sauce and the red wine. Add salt and pepper to taste.
Cook until the veggies are completely tender. Then turn the heat down to a simmer.

4. In the meanwhile, take the Healthy Noodles out of the package and rinse them off. They are in a salt solution inside the package. So it's a good idea to give them a rinse.

5. Add them to your large skillet and give them a nice stir. To make sure the noodles are coated and heated through.
6. Serve this pasta with mozzarella cheese and enjoy!
