Low carbs, Sugar Free, & Keto Doughnuts filled with French Pastry Cream & dipped in Ganache

I know this is a mouth full...But a Keto doughnut filled with French pastry Cream and dipped in dark chocolate ganache! Come on! You got to try this little doughnut out!
It's only 2.7 grams NET Carbs! Yup, that's it! I don't need to say anything anymore...
Keto Doughnut filled with Pastry cream
Yeilds: 13 mini donuts
2.7 grams NET Carbs per doughnut
Ingredients
3 cups almond flour
2 tbsp psyllium husk
1 tsp baking powder
1/4 tsp sea salt
1/2 cup monkfruit sugar
1/4 tsp nutmeg
1/2 tsp cinnamon
1 1/2 cup water
2 eggs
1 tsp vanilla extract
10 drops of Stevia
Directions:
Preheat the oven at 375F
1. In a mixing bowl, whisk together the first 7 dry ingredients until combined.
2. Add the rest of the wet ingredients with a spatula until it forms a wet dough.
3. On a baking sheet pan with a sheet of parchment paper, and with a cookie or ice cream scoop; scoop 6 doughnuts on each sheet pan.

4. Gently press them down in to a mounding disc shape.

5. Bake them in the oven for 35-40 minutes. Let them cool completely.

6. In the meanwhile, make the pastry cream. Click here for the recipe.
7. Also go ahead, and make the ganache. Click here for the recipe.
8. Now, take your mini doughnut and cut out the middle. You don't want to cut all the way through. You only want to hollow it out.

9. Then take your melted ganache and with a butter knife or a small offset spatula and spread it on your doughnut. Then with a spoon, fill the center with the pastry cream.
10. Dust it with cocoa and enjoy!
