Looking for a guilt free pie filling or a jam to spread on your toast? Well, this is a simple blueberry filling that can be used as a topping, filling, or spread it on your favorite piece of toast. It's not too sweet and its great if you need something low in sugar and low in calories as well.
Low in Sugar Blueberry filling or Jam
Yields: makes about 1 cup
Ingredients
2 cups frozen blueberries
40 drops monkfruit extract
1 tbsp raw honey
1/4 cup water
1 tbsp arrow root
Directions:
1. In a small pot, add your blueberries, monkfruit, honey, and arrow root. Stir until berries are coated.

2. Then add the water. Cook the filling on medium heat and stir frequently, until it starts to thicken and bubble. Let it chill and serve!


Store it and chill it in the fridge until you're ready to use it again.
