Milk Bread Dinner Rolls (Pain au Lait)

Looking for a dinner roll to have with your holiday meals?

Well, you can't pass this bread roll up!


I use to love eating fresh pain au laits (in French, means milk bread). They were so buttery and rich with a little sweetness. They were so good, my whole family loved them. However, after changing my diet, I grew a craving for these beloved rolls. I had to make a replica of them with no dairy and no gluten.


They came out so good, even with the right texture its just like regular bread. With a moist and fluffy texture, you're going to want to have a second one!


Try this recipe out and serve it fresh the oven.




Milk Bread Dinner Rolls (Pain au Lait)

Ready 2 1/2 hrs.

Serves 8 Rolls


Ingredients

½ cup coconut cream, warm

½ cup coconut milk, warm

½ tbsp dry active yeast

2 tbsp coconut oil “butter flavor”

2 yolks

½ cup pure maple syrup or raw honey

¼ tsp sea salt

1 tsp baking powder

1 cup tapioca flour

2 cups plantain flour


Preparation


Preheat the oven 350F | Grease a 8" x 8" square baking pan

  1. In a small pot, pour the coconut milk and cream. Heat them both up until they are warm. Not boiling, just enough to melt the coconut oil.

  2. Pour the coconut milk in a mixing bowl, sprinkle the yeast on top and whisk it until mixed through. Let it sit for about a few minutes.

  3. Then stir in the coconut oil, yolks, maple syrup. Mix until combined.

  4. Add the tapioca flour, plantain flour, baking powder, and the sea salt last. Stir that until it forms a soft dough.

  5. With a large cookie scoop, scoop rounds of dough in your grease baking pan. It makes about 8 large rolls. Cover the top with a plastic wrap. Let it rise for 30 minutes in a warm spot.

  6. Take the plastic wrap off. Bake 30-40 minutes. Serve hot. Enjoy!




Tip:

They are the best served warm. If you want to save some for the next day, just re-fresh them in the oven with a piece of foil over them and bake for 40 minutes or until heated through.
