Mini Peach Cobbler | Low Calories | Low Carbs | Gluten Free

I'm back!! Sorry guys for leaving temporary, but I'm back from my break that I took. Life has been crazy lately for everyone! But I hope you all are doing well and taking your vitamin C!!


It's May and the flowers are blooming and the smell of summer is in the air! Peaches are finally being sold at the grocery store and I just had to grab myself a bag of them. I love this time of the year with all fresh produce you can get your hands on. So I created this healthy little treat that has the fresh taste of summer dancing on your tongue. And peaches are the summer fruit that just represents those lazy summer days while you're sipping on sweet tea or wine.


With only 1.61 grams of Net carbs and 36.25 calories for each mini cobbler bite!! This recipe is easy and fun! Great afternoon or after dinner dessert! You going to want to share with your friends and family!






Mini Peach Cobblers

Yields about 24 to 36 mini cups

Calories 36.25 per serving | Net carbs 1.61 grams


Ingredients


Filling:

4 medium peaches, diced

1/2 cup monkfruit sweetener

10 drops Stevia

2 tsp xanthan gum

1/4 tsp ground cinnamon

1 pinch sea salt

1 cup water


optional: 2 tsp finely chopped fresh mint


Topping:


1 cup almond flour

1 pinch sea salt

1/3 cup monkfruit sweetener

10 drops Stevia

1/2 tsp baking soda

1 egg (for vegans: use vegan egg substitution )

3 tbsp olive oil


optional: 1 tsp orange zest


Directions:


Preheat oven 350F.

Prepare your mini muffin pans and line them with aluminum baking cups.


  1. For the FILLING: In a medium size pot, place your sliced peaches and add only the dry ingredients from the filling. Toss them in the monkfruit sweetner, xanthan gum, salt, and cinnamon. Make sure peaches are coated. Then add the water and the Stevia drops.

  2. 2. Cook the peaches on medium heat, until the filling starts to thicken. Then turn off the stove, set aside. (Stir in the fresh mint, if you are adding this)

  3. Fill your baking cups with the filling.



Topping:

  1. In a mixing bowl, mix together almond flour, salt, baking soda, and monkfruit sweetner until combined. (stir in the orange zest, if you're adding this ingredient)

  2. Stir in the olive oil, Stevia, and egg until it forms a soft dough.

  3. Top your peach filling by crumbing the dough on top like biscuit dough.

  4. Bake the mini cobblers for 20-25 minutes or until tops are golden brown.





Enjoy with you family and friends on the back porch or deck watching the sunset and eating great foods!!
