Newest Dairy Free Cream Cheese | No Nuts | No Soy | No Coconut milk

I've tried so many kinds of non dairy cream cheeses and spreads. But so far, this one has to be my favorite! It's the closest I can get to taste like the real thing. It has the tang and creaminess that you would want in a cream cheese.
Plus, it has no nuts, no soy, and no coconut milk! This could be used in macaroni and cheese, make a cream sauce out of it, or a cheese ball! I'm excited to share this recipe with you all!

No Dairy Cream Cheese
Gluten free | Nut free | Soy free | Paleo friendly
Prep time: 15 minutes
Chill time: 8 hrs to overnight
Makes about 2 cups
Ingredients
1/2 cup unmodified potato starch
2 tbsp nutritional yeast
1 tbsp fresh lemon juice + 1/4 tsp
1 cup water
1/2 cup coconut oil
1 1/4 tsp sea salt + 1/8 tsp
optional: 1/3 cup avocado mayo or your mayonnaise of choice (for a creamier flavor)
Preparation:
In a small pot, whisk together the potato starch, nut. yeast, and salt.
Add the water, lemon juice (just the 1 tbsp), and coconut oil.
Cook on medium to low heat until it thickens. Don't let it boil. But you want to constantly keep stirring it. It will start separating, that's ok. Go ahead and add the mayo if you want a creamier flavor.
Then you will need to whip it with a hand blender or a food processor for it to come together. Then stir in the 1/4 tsp lemon juice.
Pour it in a food safe container and chill it for 8 hrs or overnight. It's ready!

Storage:
Just keep it in a food safe container for up to a week or so. You probably can freeze it for up to a month. Let it defrost in the fridge.
