Non Dairy Chocolate Cheesecake No Gluten - No Grains - No Nuts - Naturally sweeten

I said I was going to try and make it, and I did!! I used the non dairy cream sauce and made a chocolate cheesecake out of it. I know it may sound strange or weird. But surprisingly, its really good! It doesn't have a strong cheesecake flavor, but its there.


Who would of thought that potato would be used for desserts...I know you can make sweet potato pie, but not regular potato. Its's really good!


This could be vegan if you sub in the eggs with a vegan egg replacements. But its dairy free, gluten free, nut free, and grain free. Paleo friendly as well. Great for people who have dietary problems.


It's not a complicated recipe. But it does require some steps. But I think its well worth it!




Non Dairy Chocolate Cheesecake

Dairy Free - Gluten Free - Grain Free - Nut Free - Vegan


Makes 1 - 9" round cheesecake

Serves 10-12


Ingredients


Crust:

4 cups paleo cookies (I used my chocolate chip cookie)

1/4 cup coconut butter flavored oil, melted


Filling:

1 batch of the non dairy cream sauce

1/2 cup pure maple syrup

1 1/2 cup coconut sugar

4 eggs

1/4 cup arrow root powder, sifted

2 tbsp nutritional yeast

1/4 cup cocoa powder, sifted

2 1/2 tsp vanilla extract


Preparation

Preheat the oven to 350F and grease a 9" round cheesecake pan


  1. To make the crust: Take your paleo cookies and place them in a zip lock bag. Use a rolling pin and roll them until they look like bread crumbs. OR you can just place them in a food processor and blend them until they look like bread crumbs.

  2. Pour the cookie crumbs in a mixing bowl and add the melted coconut oil. Toss them together until it looks like wet sand.

  3. Press the crumbs in your cheesecake pan. I like to press the sides of my pan as well. It makes it easier to take the cheesecake out of the pan.

  4. Bake the crust for 10 minutes. Set it aside.




Cheesecake filling:


  1. Make your non dairy cream sauce. Pour the sauce in a mixing bowl.

  2. Whisk in the maple syrup, coconut sugar, nutritional yeast, and vanilla extract, until completely incorporated.

  3. In another small bowl, whisk together the eggs with the arrow root. Until its smooth. Stir the eggs in with the cream sauce mix. Mix until combined.

  4. Whisk in your sifted cocoa powder. Mix until fully combined.

  5. Pour the filling over the crust.

  6. Bake for 1 hour and 10 minutes or until the center is just set. Let it cool on the counter for 30 minutes and then chill it in fridge.




Tips:


If you don't want to make your own paleo cookies you can always buy them at your local store or on amazon. Here's a good paleo cookies that would be perfect for your cheesecake.



If you have a favorite cookie, that will also work just fine! Be creative!


You can also add some instant coffee granules, if you want a mocha flavor cheesecake. That would be really good. Or add mini chocolate chips in the batter... You can create whatever flavor you want.
