Non Dairy Cream Cheese Spread

I'm trying to stay away from pasteurized dairy, it's hard for the gut to digest.

Plus, when you pasteurize dairy, it kills the good bacteria that you need to break down in dairy products. That's why people are lactose intolerance. Pasteurizing kills the lactase enzyme that helps you digest the lactose in the milk. Plus, any hidden hormones that is in the dairy, can really screw up the human hormones.


However, I'm not going to the extent of making my own raw dairy products. That would be quite expensive hobby. Unless you have your own dairy cow. Which I don't. (lol) I mean they do sell raw milk and cheese. But they are quite expensive to buy on a regular basis.


So anyways, I've decided to create or buy non dairy products that would satisfy my taste buds!


So this time I made a cream cheese spread that's perfect for your bagels, wraps, sandwiches, or your dips! Plus, it didn't cost that much! It's not only dairy free, but it's nut free, grain free, and gluten free!





Non dairy Cream Cheese Spread

Gluten free - Nut free - Grain free Updated


Ready in 20 minutes

Chill time: 24 hrs

Yields: about 2 cups


Ingredients


2 cups cooked russet potato, cubed (peeled)

2 tbsp Sauerkraut juice

¼ cup full fat coconut milk

5 tbsp nutritional yeast

1 tbsp arrowroot powder

1 tsp sea salt + salt to taste



Preparation

  1. Peel and dice the potatoes. Place them in a pot and fill it up with water until there’s about ½” water above the potatoes. Bring to a boil and continue to boil the potatoes until you can easily poke a fork into them. Drain the water from the potatoes.

  2. Add all the above ingredients. With a hand blender or food processor, blend until the potato mixture is smooth.

  3. On medium to low heat, heat the potato mix until it starts to thicken.

  4. Pour into a storage container and chill overnight. Enjoy!




Tip:


If you want the cream cheese to be more firmer, I suggest adding 4 tsp agar agar powder and 1/2 cup coconut milk. Heat it up and then add to the cream mixture before it cools down. Mix until combined and then chill. You might want to adjust your salt to your liking.
