Pecan Pie Bars | No Corn Syrup | Natural Sweetener

Love having a piece of pecan pie with a cup of coffee! Well, when I use to drink coffee...Instead, I drink it with my coffee substitute drink.


Anyways, this is a great pecan pie recipe turned in to bars! However, you can make it in to a traditional pie form if you wish!


Its gluten free, dairy free, egg free, grain free, and sweetened naturally with dates and pure maple syrup! If you have food allergies this would be a great replacement for the real thing!




Pecan Pie Bars

Serves 15 bars


Ingredients

Crust:


Filling:

2 ½ cups pitted dried dates

1 cup pure maple syrup

½ cup water

2 tbsp coconut oil “butter flavor” or ghee

2 tsp vanilla extract

2 tsp arrowroot flour

1 ½ cups pecan pieces



Preparation

Preheat oven 350F

Grease a 8" x 11" oblong pan


  1. First, make a batch of the gluten free pie crust recipe. Evenly, press it in the bottom of your baking pan. Dock the crust with a fork. (In other words, make small holes with your fork to prevent air bubbles)

  2. Blind bake the crust for 20 minutes. Set aside. **(blind bake means baking only the crust. )

  3. For the filling, in a food processor add all the filling ingredients except the pecan pieces. Blend until it's fully combined and smooth. Pour the mixture in a mixing bowl and fold in the pecans with your spatula.

  4. Pour the filling over your crust and evenly spread it out.

  5. Bake for 45 minutes. Let it cool down all the way before you cut in to squares. Enjoy!
