Peppermint Patties | Gluten Free & Dairy Free

It's starting to look more like the holidays!! I love making homemade candies for the holidays!


Making batches of them and giving them to family and friends. If you don't know what to give someone for the holidays make them some homemade candies! You can't go wrong!


These little gems are chalk full of organic peppermint extract and naturally sweetened coconut sugar. The insides of them don't look like the white traditional peppermint patty, but who really cares as long as they taste like the real thing, am I right? lol


These little guys are dairy free, gluten free, nut free, and grain free! You're going to want to make a huge batch!





Peppermint Patties

Gluten Free | Dairy Free | Nut free | Grain Free


Ready in 30 minutes

Serves 2 dozen


Ingredients

2 1/2 cups powdered coconut sugar blend**

2 cups unmodified potato starch

1/4 cup coconut oil

1/4 cup coconut milk

2 tsp peppermint extract

1 pinch sea salt


Glaze:

2 cups dark dairy free chocolate chips

2 tbsp coconut oil



** I used a coconut sugar powdered blend called Smart Sugar by Miss Jones.










Preparation:

  1. In a mixing bowl, blend together the coconut sugar blend, potato starch, and sea salt.

  2. Add the coconut oil, blend until fully combined. Then add the coconut milk, and peppermint extract. Blend until it forms a soft dough.

  3. With a small scoop, scoop out balls on to parchment paper. Lightly smash the tops with the bottom end of a cup until you make a round disc.

  4. Chill them on a sheet pan for 10-15 minutes.

  5. Meanwhile, in a pot on low heat, melt the chocolate and coconut oil together until completely melted.

  6. When the peppermint disc are hard. Start dipping them in your chocolate with a fork. A fork works better than a spoon because it lets the chocolate drain and doesn't leave a huge puddle on the bottom of your candy.

  7. Place the dipped candy on the parchment paper and let them set up in the fridge or freezer for 20 minutes. Then drizzle some chocolate on top.

  8. Store them in the freezer or fridge for a later time! Enjoy!




Tip:

This candy is a great base to flavor it any way you want. If you don't want to use peppermint, that's fine, use almond extract, or hazelnut! Get creative!
