Plantain Tortillas

I love tacos, burritos, quesadillas, and much more!! I just love Mexican food.
However, I like trying out new flours and came across plantain flour. I thought this was interesting and wondered what this would be like...
It makes great pie crust and now tortillas! I'm getting hooked on this flour. Don't get me wrong, I love cassava flour. But the cassava flour isn't really agreeing with my husband. So I was on a mission to find another flour that wouldn't be irritating on his stomach.
So here we are, I came up with this recipe so my husband and I can have tacos or burritos together!
It's gluten free, grain free, nut free, and egg free! It would be perfect for pizza, calazones, and much more!

Plantain Tortilla
Gluten Free | Nut Free | Grain Free | Egg Free
Ready in 30 minutes
Serves 7
Ingredients
1 1/2 cups water
2 tbsp olive oil
1 tsp sea salt
2 tsp baking powder
2 cups plantain flour
1/2 cup arrowroot flour
2 tsp xanthan gum
Preparation:
Preheat cast iron skillet to medium to high heat.
**Turn on the stove when you have your dough already made.
In a mixing bowl, combine the water and olive oil. Stir in the plantain flour, baking powder, sea salt, arrowroot, and xanthan gum. Mix until it forms a dough. Let it sit for 5 minutes to firm up.
Make 7 small round balls of dough. With a non stick baking spray, spray 2 pieces of parchment paper. Place the dough on one of the parchment papers. Then take the other parchment paper and place it on top of the dough and roll it out. This way your rolling pin won't get messy. Roll it to about 1/4" thick. Or if you want it thicker you don’t have to roll it as thin.
Have your cast iron skillet or any skillet on medium to high heat. Spray your pan with a non stick spray.
Take the whole parchment with the rolled out dough on it and flip upside down on to your skillet. Press it down gently and carefully lift the parchment off the dough.
Grill the dough on each side for a few minutes.
Enjoy it with favorite taco toppings!!
