Sugar Free & Gluten Free | Christmas Sugar Cookies

Eating healthy around the holidays, is very hard. So many sweet treats everywhere you go. Trust me I know, it haunts me everyday when I go to work. But, you can always make healthier options and store them at home for those times you want something sweet but without the guilt. I have a small sugar free stash of chocolate in my office drawer. Just in case I have a sweet tooth.
But anyways, this is a easy and great holiday recipe to share with the whole family. Christmas Sugar cookies without the sugar! You would never know they were sugar free! They are not just sugar free but also gluten free and Keto friendly. Just 2.5 grams NET Carb!
Sugar Free Christmas Sugar Cookies
Yields: about 2 dozen
Ingredients
1 cup unsalted butter, soften
1 cup monkfruit sugar
10-15 drops Stevia extract
2 cups almond flour
3/4 cup coconut flour
1/4 tsp sea salt
1 tsp baking soda
1/2 tsp baking powder
1 egg
1 tsp vanilla extract
1/2 tsp almond extract
Directions:
Preheat the 350F
1. In a mixing bowl, cream together with a spatula or (in your mixing machine on medium speed) the soft butter with monkfruit and Stevia until light and smooth.
2. Add the eggs, vanilla, and almond extract. Mix until combined.
3. Add all the dry ingredients, almond flour, coconut flour, salt, baking soda, and baking powder. Mix until it forms a stiff dough.

4. Place a sheet of parchment paper on a baking sheet. With a cookie scoop or ice cream scoop, scoop about 6 - 8 cookies. Press them down and sprinkle some Christmas sprinkles of your choice.
5. Bake in the oven for about 10- 12 minutes or the edges are lightly brown. Let them cool completely before you take a bit out of them. Since the structure of the cookie is still setting up.

Enjoy them with a cup of coffee or tea around a table with friends and family!
