Sugar Free | Gluten Free | Low Carb French Napoleon Dessert

French napoleons are a French dessert favorite. It's traditionally layered with puff pastry (mille -feuille) strawberries, pastry cream and chantilly cream. Glazed with poured fondant with a chocolate drizzle. It's so delicious! However, I'm doing something alittle different but whole lot healthier. This version is sugar free, gluten free, and keto friendly. With 3 layers of sponge cake, whip cream, and fresh raspberries. This guy is only 11.15 grams net carb! Don't be intimidated by the size it's super easy to make.

Sugar Free | Gluten Free | Low Carb French Napoleons

Yields: 4 assembled napoleons

11.15 grams Net carbs

Ingredients

1 recipe of Keto sponge cake (makes 12 sponge cookies; don't over bake)

1 recipe of Sugar Free Mascarpone Cream

1/2 to 1 cup fresh raspberries

powdered monkfruit for dusting

Directions:

1. Make 1 recipe of the sponge cake and make 12 cookies. Don't over bake them, unless you want them crispy. While cookies are baking, make the mascarpone cream.

2. Once the cookies cool down, its time to assemble the napoleons. Take one cookie and flip upside down. You want the flat side facing up so it will be easy to build.

3. With a piping bag, fill/pipe the mascarpone cream in tear drop shapes around the perimeter of the cookie. However, place a fresh raspberry beside every other tear drop and one in the middle. Fill the rest of the center with the cream.

*** Tip: If you don't have a piping bag, no worries. Just put a dollop of cream on the cookie and place the raspberries in the center and layer it up like so.

4. Again, place another sponge cookie on top of the layer of cream and raspberries and repeat the process again.

5. Then finally add the last sponge cookie on top and pipe a tear drop on top and place a fresh raspberry. Dust with powdered monkfruit sugar.

It's that simple and fun! Once you have all your components, the assembly goes very fast. Enjoy with your family and friends! They wouldn't even know it was healthy!
