Sugar Free & Keto friendly Pastry Cream

Who doesn't love pastry cream? It's so rich, creamy, and just a delightful custard to eat! This is a baker's staple in making baked goods. You can add whipped cream to it which makes it more creamier or fluffy like mousse. You can flavor it anyway you see fit. It makes a great filling for cakes, donuts, tarts, pies, and much more! Or just dip it with fresh fruit! This stuff is so versatile you can eat it right out of the bowl! Just saying...

Anyways, this recipe is sugar free, gluten free, and Keto friendly! I hope you enjoy!





Sugar Free & Keto Friendly Pastry Cream

Yields: about 3 cups



Ingredients


2 cups heavy whipping cream (for vegan, use coconut milk full fat)

1/2 cup water

2 tsp vanilla ext.

1/2 cup monkfruit sugar

2 eggs (for vegan, no egg substitute)

1 tsp xanthan gum (for vegan, use 2 tsp cornstarch)

5 drops stevia

2 tbsp unsalted butter ( for vegan nondairy butter "Earth balance")


Directions:


1. In a medium pot, pour the cream, milk, and the vanilla together. Stir together with a spatula. On medium to high heat, scald the cream mixture.


2. While the cream is heating up, in a mixing bowl, whisk together the monkfruit and the xanthan gum. Then add the eggs. Whisk all together until fully combined.

(**Vegan version: whisk together just the sugar with the cornstarch; set aside)



3. When the cream is just about to boil, slowly pour a steady stream of hot cream (while whisking) in to your egg mixture until it's combined. Pour back in to your pot and continue to cook on medium to low heat. Continuously stirring with a spatula. Keep stirring until it thickens up.


(Vegan version: slowly add a little bit of the hot coconut milk in your sugar/cornstarch, whisk until combined. Then pour the sugar mixture in to the coconut milk and continue to cook (stirring continuously with a whisk) on medium to low heat until it thickens.)


4. Then you will need to strain the pastry cream through a fine mesh strainer. Add the butter and Stevia; mix until its melted and combined.

Then cool it down and use it for a cake filling or dip it with fruit!
