The Best Keto Macaroni & Cheese



Macaroni and cheese was one of my favorite dishes growing up. I loved this stuff, I could eat the whole box of macaroni and cheese by Kraft. But once I got on my own and started making it from scratch I was hooked on homemade mac-a-cheese! I don't think I would ever go back to the blue box! But this is a keto and low carb cheese sauce with low carb pasta! With about 6 grams Net carb (per serving) including these Healthy Noodle pasta!





Keto Macaroni & Cheese

Yields: 4 servings

6 gram Net carbs


Ingredients

2 pkg Healthy Noodles or Low carb pasta of choice


Cheese Sauce:


6 oz cream cheese

1 cup heavy whipping cream

1/2 cup water

1/2 cup sour cream

4 tbsp unsalted butter

4 cups cheddar cheese

1/4 tsp sea salt and to taste

1/2 tsp ground mustard

1/4 tsp ground garlic



Directions:


1. In a large saucepan, on medium heat melt down the butter and cream cheese. Whisk together.

2. Stir in the cheddar cheese, sour cream, heavy cream, and water. Whisk until it's completely combined.

3. Then add the ground mustard, ground garlic, and the salt. Whisk until completely combined. Continue to cook on medium heat until it starts to thicken. This will take about 5 -10 minutes.

4. You can use the Healthy Noodles (with only 2 grams Net Carb in each package) or you can use your own low carb paste.

5. Toss your low carb pasta in the cheese sauce and enjoy yourself a delicious and rich cheesy "macaroni" and cheese again!





Healthy Noodles are sold at Costco. You might be able to find them online. But I know every Costco is different, but you may want to see if your store has them in stock in the fridge section.
