Vegan "Lobster"

Lately, I've been thinking a lot about seafood. Do you miss seafood too? Tofu soaked in a seaweed brine and seasoned like regular seafood. This is healthier and tasty. Serve it with steamed veggies and mash potatoes! This recipe is simple and easy to make. Try it out on your friends!
Vegan "Lobster" Brine
Ingredients
Brine:
1/2 sheet nori (seaweed), cut in to cubes or chopped
1 cup water
1/4 tsp sea salt
1/2 tsp lemon juice

"Lobster":
1 block tofu, firm or extra firm (14 oz)
Directions:
1. For the brine; mix all the ingredients for the brine in a Tupperware container.
2. Cut your tofu in 1/2" blocks and place them in your brine for 2 hours or overnight.

3. On a greased baking dish, place half of your tofu from the brine on the baking sheet. Sprinkle on both sides old bay seasoning, granulated garlic, and onion powder.
Pre-set your oven to broil on medium to low. Bake on each side for 15-20 minutes until the edges get golden brown.
4. Take the other half of your tofu out of the brine and crumble it up and place it on the top of the baked tofu. Sprinkle a little more of old bay seasoning.

Raise the broil setting on high heat and place the "lobster" back in the oven and continue to bake for 15-20 minutes or until the tops are getting golden brown on top. Take them out of the oven and lightly squeeze some lemon juice on top! Serve with brown rice or mash potatoes and veggies! Enjoy!
